The airline reported the aircraft had been dispatched under minimum equipment list requirements due to a deferred defect related to a pitot probe, which prevented the aircraft to be operated in icing conditions. According to weather forecast no icing conditions were to be expected for the sector, however, enroute the crew detected the weather conditions were worse than forecast and decided to divert to Madrid. A replacement aircraft continued to Bilbao.
